My one and only will be gone having "manly time" (aka deer hunting) with the other Willis men for a few days next week. This means it's my chance to eat some serious mexican food :) [For those of you that didn't know, Greg doesn't enjoy Mexican cuisine.]
That brings me to my request: if you have any great recipes, please share! You can even post them on your own blog for others to enjoy as well!
Just to clear things up, I will be lonely and depressed without my Greg so if anyone wants to get together I would love it! :)

I have a yummy recipe for enchiladas! This was one of my favorite recipes that my mom would make growing up and I just LLOOVVEE it. I don't know the exact amounts that I put in though so I'll give it my best shot!

1 lb ground beef
3/4 container of sour cream
1 can enchilada sauce
Grated Cheddar Cheese
Chopped Onion (optional)
Chopped Green Peppers (optional)
Tortillas
So you brown the ground beef and mix in sour cream, onions, and peppers with the beef. (You can put cheese in it as well if you want)
Pour a very thin layer of enchilada sauce on the bottom of a 11x13 casserole dish.
Pour the remainder of the sauce in a pie dish and dip each tortilla in the sauce. Then fill each tortilla with the beef filling and roll it up and put it in the casserole dish.
Pour the left-over sauce onto the enchiladas and cover casserole dish with aluminum foil. Bake for 15 minutes @ 350. Then take out enchiladas and cover with grated cheese and cook uncovered for an additional 5 minutes.
This makes quite a few enchiladas...like 8 or so.

love your new blog look! as for mex food, we love to just heat up some black beans, cook some rice-a-roni (chicken flavor is good), and plop them in a tortilla with cheddar, sour cream, guac, and some fresh (or not) salsa. then top with green enchillada sauce out of the can and more cheese, and broil in the oven until just crispy. or go treat yourself at cafe rio! you definitely deserve it for holding down the fort on your own.

ReplyDeleteOh, and yes Amy it really has been 6 months. I counted it on my fingers like 15 times because I couldn't believe it either. But we all know that fingers don't lie :)

ReplyDeleteAlso, Greg thought it was "funny" that the first thing I think about when he's gone is having Mexican food without him. I reassured him that I'm putting off actually thinking about him being gone because I'm going to miss him something terrible. The last time he was gone (he went to a Marketing Conference in Denver in September) I cried because I missed him so bad. No lie. He was only gone 3 days.
Well, I'm sad that I am not closer to you. I would for sure make something/eat out with you every night. I LOVE Mexican food! We have a great Mexican place out here...
